Takie coś znalazłem o Pendits: The Pendits winery is a relatively small family-owned business, started in 1991, where 11 ha of vineyards nestled under Mount Tokaj are tended by Marta Wille-Baumkauff. Some of the vineyards are quite steeply terraced, and elevation varies from about 200 to 260 m. Planting style depends on the age of the vineyards, with those inherited from the communist era still at 3m spacing, but slowly converting to 2.0 x 0.8m spacing as replanting occurs. The soil tends to be calcareous, even in one vineyard causing the occurrence of chlorosis. The eponymous South-facing Pendits is the best vineyard, with a microclimat that was well regarded historically, and where the grapes always ripen a little sooner. Harvest period is quite extended, typically starting in mid October and concluding only in December. Resources mostly go into the vineyards, with a relatively low tech operation in the winery itself. The vineyard is organic, the only one in Tokaji, and has converted to biodynamic practice with the hope of being certified next year (although this is expensive to achieve in Hungary because there are so few others). Evidence of biodynamic culture is visible in the forms of the cover crops maintained between the rows. Because the vineyards are fairly well isolated from the neighbors, with only two other small vineyards in juxtaposition to those of Pendits, spreading effects from conventional viticulture are not a problem. The main problem is caused by starlings migrating from Russia, which are capable of consuming a hectare of grapes within 20 minutes—perhaps this is a metaphor for the recent history of Hungary. Netting has been tried, but is expensive and cumbersome. There is some polyculture here, with plantations of apricots trees found among the vineyards, and actually proving more profitable than wine to produce. Grape varieties are the usual suspects, with 70% Furmint dominant, and the others comprising Hárselevlú, Zéta and a half hectare of Kabar (a recent hybrid between Bouvier and Hárselevlú). Actually, as the result of a mistake made by a local nursery when one vineyard was replanted, there are a few rows of Pinot Noir, which are used to make a light red, somewhat in the style of a more aromatic version of an Alsatian Pinot Noir.
